Cooking time: 3-4 minutes

Ingredients

  • 2 x 250g punnets cherry tomatoes
  • ½ small red onion, finely diced
  • 2 Tbsp shredded basil leaves
  • 2 Tbsp red wine vinegar
  • 8 slices sourdough bread
  • 1 clove garlic, halved
  • 1 tsp extra virgin olive oil
  • Sea salt and cracked pepper

Putting it together

1. Cut the cherry tomatoes in half and combine with red onion, basil leaves and red wine vinegar. Set aside

2. Toast sour dough bread slices and while still warm, rub with garlic cloves..

3. Top sour dough slices with a spoonful of tomato mix and drizzle with a little olive oil, sea salt and cracked black pepper
