BAKED SPICY CHICKEN  AND CHIPS  recipe image

marinating overnight

Ingredients

  • 1 cup low-fat yoghurt
  • ¼ cup lemon juice
  • 600g skinless chicken breast,
  • cut into chunks
  • 1 cup fresh breadcrumbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried cumin
  • chilli powder to taste
  • canola oil spray
  • 1 large orange sweet potato

 

Putting it together

1.     Combine yoghurt and lemon juice. Place into a large ziplock bag. Add chicken. Shake. Marinate in the fridge overnight.

2.    Preheat oven to 180ºC. Combine breadcrumbs with herbs and spices. Roll chicken pieces into seasoned breadcrumbs. Place on baking tray and spray with oil.

3.    Peel sweet potato. Cut into chips. Place on a baking-paper lined baking tray. Spray with oil. Bake chicken and chips for 30 minutes, turning at least once. Serve with a green salad.
