Ingredients
• cooking oil spray
• 2 cups self-raising flour
• 2 cups unprocessed bran
• ¾ cup raisins
• 3 bananas, mashed
• 1 teaspoon baking soda
• 1½ cups trim milk
• 50g reduced-fat spread (use one with at least 60% fat for baking)
• 6 tablespoons golden syrup
• 2 eggs, lightly beaten
Putting it together
1. Preheat oven to 190ºC. Lightly spray a 12-hole muffin tin with oil.
2. Combine flour, bran, raisins and banana in a bowl. Set aside. In another bowl, dissolve baking soda in milk. Set aside.
3. Melt spread and golden syrup in a saucepan over low heat. Add to banana mixture and stir to combine. Add
milk mixture and eggs. Combine well but do not over-mix.
4. Spoon into muffin holes. Bake for 15-20 minutes or until skewer comes out clean.
