7 great ways to use soy as a substitute for other ingredients or for a quick healthy meal

• Use tofu as a substitute for meat in your stir-fries but marinate it first. Tofu will easily absorb the flavours of a soy sauce and ginger marinade, or you can try sweet chilli sauce and basil, or tahini (sesame paste) and lemon.

• Use low-fat calciumfortified soy milk instead of regular milk on your breakfast cereal or make a smoothie with soy milk and yoghurt.

• There are many tasty soy sausages and burgers on the market. These can be used instead of meat at a barbie, or soy sausages can be used in pasta sauces and risottos.

• Soybeans can be purchased fresh, frozen or canned from supermarkets or Asian markets. To make the Japanese snack edamame, boil soybeans in their pods, then sprinkle with a little salt.

• Add canned soybeans to salads, pastas and casseroles.

• Use miso paste to make a rich stock. Add noodles, meat, tofu or vegetables for a quick meal.

• Sauté tempeh in soy sauce and lime juice, add mushrooms, spinach and herbs. Use the tempeh to make fajitas and add your choice of fillings.
