Ingredients

½ cup red lentils
2 teaspoons olive oil
3 cloves garlic, crushed
1 large onion, chopped
1 small red capsicum, chopped
2 zucchinis, sliced
1 stalk celery, sliced
2 x 420g cans diced tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1½ cups low-fat ricotta cheese
12 dried or fresh lasagne sheets
½ cup grated low-fat cheddar cheese
green salad, to serve

White sauce
1/3 cup cornflour
3 cups skim milk
¼ onion (not chopped)
½ teaspoon ground nutmeg
ground black pepper, to taste

Putting it together

1. Preheat oven to 180°C. Soak lentils in enough boiling water to cover them, for at least 30 minutes, then drain

2. Heat oil in a large pan over medium heat. Add garlic and onion, cook for 2 minutes. Add capsicum, zucchini and celery and cook for 2–3 minutes.

3. Add lentils, tomatoes, tomato paste, oregano and 1½ cups water. Bring to the boil, reduce heat and simmer, stirring, for 30 minutes, until tender.

4.Meanwhile, make White sauce: blend cornflour with 2 tablespoons milk, until smooth. Pour into saucepan with remaining milk, add onion and stir over low heat until the mixture boils and thickens. Add nutmeg and season with pepper. Cook over low heat for 5 minutes. Remove and
discard onion.

5.Beat ricotta with ½ cup of white sauce. Spread of lentil mixture over base of a large ovenproof dish. Cover with a layer of lasagne sheets. Spread another of lentil mixture over lasagne, then spread ricotta evenly over the top. Follow with another layer of lasagne, then remaining lentils. Pour white sauce over top and sprinkle with grated cheese.

6.Bake for 1 hour, covering loosely with foil if the top starts to brown too much. Stand 5 minutes before slicing. Serve with salad.

Tips

1: This lasagne freezes well, either as a whole lasagne or as individual portions.
2: Make a double batch of lentil sauce and freeze half. Next time, you’ll only need to make the white sauce and assemble it.
