BBQ Tuna Nicoise Salad
With our warm weather continuing, fire up the BBQ for this summer treat

Preparation time: 30 minutes
Serves: 4
Cost: $6.25 per serve
• 250g green beans,
• trimmed, cut in half
• 4 (about 120g each) tuna steaks
• 1/2 teaspoon olive oil
• 1 punnet (250g) cherry tomatoes
• cooking oil spray
• 4 slices sourdough bread
• 80g mixed lettuce leaves
• 1⁄3 cup Kalamata olives
• 1/2 small red onion, thinly sliced
• 2 tablespoons finely chopped basil
• 1 garlic clove, halved
1.Cook beans in boiling water for 2 minutes, drain and cool.
2.Brush both sides of tuna with olive oil and season with freshly ground black pepper. Place tomatoes in a bowl and
spray with cooking spray. Spray bread on both sides with cooking spray.
3.Place cooked beans, lettuce leaves, olives, red onion and basil in a large bowl and mix until well combined.
Dressing
1/4 cup white wine vinegar 11/2 tablespoons extra virgin
olive oil 1 teaspoon Dijon mustard 1/4 teaspoon caster sugar
1 For the dressing, whisk all the ingredients together and set aside in a flat dish.
