Cooking time: 15-20 minutes

Cost: $9.30 / $1.55 per serve
6 large ripe tomatoes
50g low fat feta cheese, finely cubed
1 cup fresh whole grain breadcrumbs
2 Tbsp currants
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh basil
1. Preheat oven to 180c. Cut top from tomatoes and reserve. Scoop out flesh from tomatoes and discard.
2. Combine feta, breadcrumbs, currants, parsley and basil. Season with salt and pepper. Fill each tomato case with breadcrumb mix and top with reserved lid.
3. Place into a baking dish and bake for 15-20 minutes till golden and heated through.
