Quick, simple & tasty, best of all its easy to prepare.

Cooking time 30 minutes

100g sweet potato, peeled and diced
100g potato, peeled and diced
100g carrot, peeled and diced
100g pumpkin, peeled and diced
1 tsp grated ginger
2 x 150g salmon fillets
Juice of 1 lime
Cooking oil spray
3 medium Swiss brown mushrooms, quartered
50g spinach
1 Steam sweet potato, potato, carrot and pumpkin for 10–15 minutes, until soft. Mash, until smooth. Stir in ginger.
2 Grill or bake the salmon fillets for 7–8 minutes, or until done to your liking. Sprinkle with lime juice. Spray mushrooms with
oil and grill or bake for 5 minutes, until softened.
3 Cover the spinach with boiling water and leave
for a minute or two.

Serve the salmon fillet with mash topped with spinach, and mushrooms on the side.
